Ingredients
- 12 oz medium pasta shells
- 1 lb Italian sausage, casings removed (mild or hot, your choice)
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (10.5 oz) cream of mushroom soup
- 8 oz cream cheese, softened and cubed
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 1/2 cups shredded mozzarella or a Mexican blend cheese
- Fresh parsley for garnish (optional)
Method
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
- Cook the pasta shells in a large pot of salted boiling water until just al dente, about 1 to 2 minutes less than the package directions. Drain and set aside.
- In a large skillet over medium-high heat, brown the Italian sausage, breaking it up as it cooks. Once fully cooked, transfer to a plate and leave about a tablespoon of drippings in the pan.
- Add the diced onion and green bell pepper to the skillet. Sauté for 4 to 5 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Reduce the heat to medium and add the drained diced tomatoes, cream of mushroom soup, chicken broth, and cream cheese. Stir continuously until the cream cheese is fully melted and the sauce is smooth and creamy.
- Season the sauce with Italian seasoning, smoked paprika, salt, and black pepper. Stir in the cooked sausage and mix well.
- Add the cooked pasta shells to the skillet and gently toss everything together until the shells are evenly coated in the sauce.
- Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle the shredded cheese generously over the top.
- Bake uncovered for 20 to 25 minutes, or until the cheese is bubbly and beginning to turn golden at the edges.
- Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley if desired and dig in.
Tips for the Best Result
Don’t skip the al dente step when boiling your pasta. Since it continues cooking in the oven, starting it slightly underdone prevents it from becoming mushy. Softening your cream cheese before adding it to the sauce makes it melt much more smoothly and quickly.
Make It Your Own
This recipe is wonderfully flexible. Swap the Italian sausage for ground beef or turkey if that’s what you have on hand. Add a pinch of red pepper flakes if you love a bit of heat. You can also stir in a handful of baby spinach right before baking for a little extra green. And if you’re a cheese lover, feel free to mix in some shredded parmesan along with the mozzarella for an even richer topping.
Storage and Reheating
Leftovers store beautifully in an airtight container in the refrigerator for up to four days. Reheat individual portions in the microwave with a small splash of broth or water to keep the sauce creamy. The whole dish can also be reheated covered in a 350°F oven for about 15 minutes until warmed through.
